Preheat oven to 400 F (200 C). Grab a 9×13 baking dish, and lightly greased with vegan butter. (Do this only if you plan on baking your mac and cheese and not serving it as a stove top dish). In the same pot used to boil your pasta, melt vegan butter completely and then add in chickpea flour. REDUCE heat to low. Add 3 cups of cheese and stir until melted. Add macaroni, stirring until well coated. Pour into prepared baking dish. Sprinkle remaining cheese evenly over top, followed by crumbs. I’ve made it with both. If using regular milk, I highly recommend 1% or higher (as in, leave the skim milk for other nefarious purposes). - Cook the macaroni in water until done.
- Drain macaroni and set to the side.
- Melt butter in sauce pan.
- Add cream cheese and cook low till melted- be careful not to burn.
- Add in shredded cheese and macaroni.
- Stir vigorously until all cheese is melted together and well mixed.
- You can either serve now or for additional cheesiness- pour macaroni into a baking dish.
- Sprinkle with shredded cheese.
- Bake in over for 15 minutes.
- Serve gooey!!!
